Summer 2026 at One Willow: Live Music, Outdoor Dining, and Fresh Seafood on Sandy Hook Bay

Summer at the Jersey Shore moves fast, and the restaurants that make the most of it tend to book up early. At One Willow in Highlands, summer means the outdoor deck is in full use, the happy hour crowd starts arriving earlier in the day, and the live entertainment schedule fills out the calendar from Wednesday through Sunday.
If you're planning your summer around Sandy Hook Bay, here's what to expect at One Willow this season, and how to plan around it.
Outdoor Waterfront Dining, Made for Summer
One Willow's outdoor deck is the centerpiece of the summer experience. Positioned directly on Sandy Hook Bay with views toward Sandy Hook and the New York City skyline, the deck is where most of the action happens once the weather turns warm.
Summer is also when the difference between a restaurant that's simply near water and one that's built around it becomes most obvious. The deck seating, the open air, and the long stretch of daylight all come together, especially in the early evening, when the light over the bay starts to shift toward sunset. If golden hour dining is part of your plan, our post on sunset dining at One Willow covers how to time a reservation around it.
Live Music and Entertainment
One Willow regularly hosts live music and local entertainment as part of its regular schedule, adding to the relaxed, social atmosphere on the deck. Schedules can shift week to week, so the best way to plan around a specific show or performer is to check the current entertainment lineup directly through One Willow before booking.
Pairing a reservation with live music is one of the easiest ways to turn a casual dinner into a full evening out, especially on weekends when the deck, the music, and the bay views all come together.
Happy Hour on the Water
Few things capture the feel of a Jersey Shore summer like happy hour on a waterfront deck. One Willow's happy hour menu offers a more casual, lower key way to experience the restaurant, ideal for an after work stop, a pre dinner drink with friends, or simply extending a beach day into the evening.
Signature cocktails make happy hour an easy sell on their own. The Jersey Surfin', made with Mi Campo Blanco tequila, lemon, jalapeño infused orange liqueur, cucumber, and cilantro, and the Beach Pass, made with Ketel One vodka, black tea, peach, and lemonade, are both built for warm weather. For something with a bit more spice, the Hot and Bothered combines jalapeño and mint infused Mi Campo Blanco tequila with orange liqueur, strawberry, ginger, lemon, and basil oil.
Current happy hour days, times, and pricing are listed on the One Willow happy hour menu, which is worth checking before you go since offerings can be seasonal.
Summer Seafood: What's on the Menu
Summer is peak season for fresh, local seafood, and the kitchen leans into that. The Fulton Fresh Catch, a daily, market price dish based on whatever the team brought back from the Fulton Fish Market that morning, is one of the best ways to experience the season's seafood at its freshest. It's worth asking your server about it whenever you visit.
The Raw Bar is another summer staple, with oysters, clams, and chilled shrimp that pair naturally with an afternoon or evening on the deck. From the appetizer menu, the Tuna Tacos, made with Bluefin tuna in crispy wonton shells with wasabi ponzu, and the Grilled Littleneck Clams with Calabrian chili butter, chives, lemon zest, and sourdough bread crumbs, are both light enough for warm weather but substantial enough to anchor a meal.
For something heartier, the Spaghetti and Local Littleneck Clams, made with Semolina Pasta Shoppe pasta, colatura, white wine, breadcrumbs, and aged Parmesan, brings together local seafood and classic technique in a dish that works for lunch, brunch, or dinner.
All of this reflects the same sourcing philosophy behind the rest of the menu. If you want the full story on where the seafood comes from and why it matters, our post on One Willow's approach to sustainable seafood covers it in depth.
Arriving by Boat This Summer
Summer is also the busiest season for boaters on Sandy Hook Bay, and One Willow's location near Sandy Hook Marina makes it a natural stop. Dock and Dine lets you reserve a table at the restaurant and a slip at the marina separately, then walk straight from your boat to your table.
Given how popular both the marina and the restaurant get during summer weekends, booking both well in advance is strongly recommended. Our full guide on how Dock and Dine works at One Willow breaks down the process step by step.
Hours and Planning Ahead
One Willow is open Wednesday through Sunday throughout the summer. Dinner service runs from 4 PM on Wednesday and Thursday, and until 10 PM on Friday and Saturday. Weekend brunch runs from 11 AM to 3:30 PM on Saturday and Sunday, making it easy to start a summer day on the water early and stay through the afternoon. The restaurant is closed Monday and Tuesday.
Between the deck, the live music, happy hour, and a menu built around the season's best seafood, summer is when One Willow is at its fullest. Reservations, especially for deck seating on weekends, fill up well in advance, so it's worth booking earlier than you think you need to.
Reserve your table at One Willow and start planning your summer on Sandy Hook Bay.
